Roasted carrots are overlooked far too often. They’re SO good. Moost people aren’t “afraid” of carrots as they may be with other vegetables, so they make a great vegetable dish everyone, even our picky eaters. The orange juice, maple syrup, and cinnamon in this recipe compliment the sweetness in carrots while the lemon juice and salt add a freshness to the dish so it’s not too rich. This side dish is a must for your Thanksgiving table tomorrow!
***note: this serves 3 people, I highly recommend doubling this recipe
Grocery List:
- 1 lb carrots
- olive oil (2 tbsp)
- kosher salt (1/2 tsp)
- cracked balck pepper (1/4 tsp)
- 2 lemons (4 tbsp lemon juice)
- 2 oranges (1/2 cuo orange juice)
- maple syrup (1/4 cup)
- ground cinnamon (1/4 tsp)
Let’s get these carrots going, shall we?
the carrots:
Preheat oven to 400 degrees
Wash and peel carrots if necessary. Cut carrots in half lengthwise so each carrot is approximately the same size. Put the carrots in a large bowl and add olive oil, salt, and pepper. Toss until each carrot is coated. Spread out carrots on a large baking sheet and roast for 20 minutes at 400 degrees or until fork-tender.




NOW, FOR THE GLAZE:
While the carrots are in the oven, let’s work on the orange-maple glaze. To minimize clean up, grab that same bowl you used to toss the carrots in olive oil. In that bowl, combine the juice of two oranges, ¼ cup maple syrup,2 tbsp lemon juice, and ¼ tsp ground cinnamon. Whisk. Once the carrots are fork tender, keep them on a baking sheet and pour this marinade all over them so that each one is coated. Increase oven temp to broil and let carrots roast for another 5-8 minutes. Keep an eye on these because the sugar from the juice and maple syrup can burn easily. You know the carrots are ready when the glaze looks sticky, thicker in consistency, and the carrots are golden brown. Top with the juice of one lemon (approx. 2 tbsp), salt to taste if necessary, and plate them up! Enjoy <3
