Here’s a great sugar cookie recipe for those celebrating the holidays this year. As you already know, baking is not my forte. So, for the holidays I decided to test out other people’s cookie recipes rather than attempt at constructing my own. Luckily, I came across another great cooking site called MOMables. I tried her Gluten-Free Sugar Cookies recipe and I am pleasantly suprised. The cookies turned out great and I successfully replaced ingredients to make my cookies dairy-free too!
Here’s the recipe link: https://www.momables.com/gluten-free-sugar-cookie-recipe/
I replaced the 1/2 cup butter with 1/2 cup Earth Balance, and used a tablespoon of water instead of milk to make my cookies gluten free!
**For those who aren’t gluten-free, regular all-purpose flour works too!
THE GLAZE:
I decided to do a lemon glaze as my frosting so the cookies wouldn’t be too sweet. Here’s what I used:
-2 cups powdered sugar
-1/4 cup lemon juice
-1/2 tsp kosher salt
-1 drop blue food coloring gel
Once completely cooled, dip cooking face down in glaze. Hold cookie face-down a couple inches above the bowl of glaze and let any excess glaze drip back into bowl. Then set cookie aside and decorate however you’d like!
Hopefully, this brings you the slightest bit of holiday cheer during these rough times. Happy Holidays and stay safe! <3
