All you need is arugula, juice from 1 lemon, and some olive oil. Together, these ingredients create the perfect salad base, meaning it is easily customizable and buildable. It goes great with grilled chicken, seared steak, salmon, plant-based proteins, and makes the perfect side for any meal. What you need:
1 bag of arugula (approx. 7 oz)
2 tbsp olive oil
salt + pepper
HOW TO MAKE:
Make sure produce is clean; wash and dry if necessary.
1) Place arugula into a large bowl and set aside.
2) Cut lemon in half and juice into a small bowl.
3) In the same bowl as the lemon juice, pour 2 tbsp of olive oil, add 1 tsp salt, 1/2 tsp black pepper and whisk together.
(adjust salt and pepper to taste 🙂 )
4) Lastly, pour dressing over the arugula in the large bowl and toss.
5) Taste and serve!
