Roasted Cheesy Zucchini

Salty, crispy, cheesy, garlic-y zucchini that will convince EVERYBODY, even the pickiest eaters, that vegetables are indeed delicious (when made properly of course).

*My vegan friends – use your favorite vegan cheese for this recipe, preferably one that melts well and crisps up in the oven.

*My non-vegan friends – use Monterey Jack! If you want to go the next level up, use pepper jack 🙂

What You Need:

Prep: 5 minutes Cook Time: 15 minutes Total Time: 20 minutes

Serves 1 (I recommend doubling/tripling if cooking for a group)

1 Zucchini

1/4 Cup Cheese

1.5 Tbsp Olive Oil

1/2 Tsp Garlic Powder

Salt + Pepper

Directions:

1.Preheat oven to 450F.

2.Wash and dry zucchini. Thinly slice zucchini into coins.

3.Line baking sheet with tin foil. Drizzle with half tbsp of olive oil and spread out evenly. Add a three-finger pinch of salt and pepper to baking sheet.

4.Line up zucchini coins onto baking sheet. Drizzle remaining olive oil over zucchini. Sprinkle garlic powder over zucchini and a pinch of salt and pepper. Roast for 10 minutes at 450.

5.Remove zucchini from oven, add cheese over top and broil for 1-2 minutes. Remove from oven and serve!
