- 2 Bunches Kale (Washed and dried)
- Croutons of Choice
- Miyokos Parmesan Cheese
- Nutritional Yeast
- 2 Tbsp Mayo
- 1 Lemon (the juice)
- 2 Tsp Chopped Capers
- 1 Tsp Dijon Mustard
- 1 Tsp Minced Garlic (pre-chopped)
- Olive Oil
- Salt + Pepper
1.Chop kale and add to a large bowl. Drizzle with olive oil and add 2 pinches of salt. Massage for 1 minute with clean hands. Let sit.
2.In a bowl, stir together mayo, lemon juice, dijon mustard, capers, garlic, and a drizzle of olive oil. Adda pinch of salt and pepper. Stir and taste. Adjust accordingly.
3.Pour dressing over kale, toss, and plate. Top with nutritional yeast, croutons, and parmesan cheese.
